ABOUT CHEF SYLVIA

A true Texas girl. Sylvia was born in Houston and has made Austin her home since 1969. Her professional background includes working as an account manager, administrator, sales manager, and as an event planner. Sylvia was also a consultant for sixteen years and traveled extensively training Leadership for Safety in the workplace. She found training and coaching leaders rewarding, but the travel was taxing on her, and her family.

While pursuing her career, Sylvia was simultaneously starting on a path of personal and spiritual development. She began discovering the life changing benefits of eating a primarily raw food diet. Sylvia decided to leave her career and take time out to recover her health and sanity. With free time she wasn't used to, she spent hours in the kitchen creating delicious, healthy food that fed her body and soul.

She started to dream about opening her own Café, serving healthy and amazingly delicious cuisine. This dream started to take on a life of it's own and after a series of Energy sessions with Dr. Morguelan. Sylvia gained the energy, courage and focus to turn the dream into Beets Living Foods Café. She trained at Living Light Culinary Arts Institute and was certified as a raw gourmet chef and instructor, giving her the skills to accomplish her dream.

ABOUT RAW FOODS

Everyone knows it's healthy to eat fresh fruits and vegetables every day. That isn't a new concept. The raw food diet simply suggests that these foods should be most of what we eat. When you prepare fruits, vegetables, nuts and seeds without cooking, you preserve the maximum nutrition in these foods.

You don't have to eat 100% raw or even be a vegetarian to get started. Anyone can enjoy improved health and vitality by eating at least 50% raw foods.

Raw and living foods feed your body and your cells with vitamins, minerals, enzymes and other life-giving substances that cooking destroys. Some of the many benefits of eating a raw and living foods diet are: • Better digestion • More energy • Clearer eyes and smoother skin - the "Raw Glow" • Mental clarity and focus • Getting to and maintaining your ideal weight - without hunger • Optimal body pH balance • Stronger immune system • Emotional Balance • Eco-friendly Taste & Pleasure

Swinging by via Brooklyn, we were told this raw foods restaurant was the place to eat at. Those recommendations proved true. While not a raw foodie myself, nearly half of my diet is raw, and so I try to check out this cuisine whenever I can as I travel. And this is perhaps the best living foods restaurant I've found so far, rivaling Cafe Gratitude in San Fran. The ELT was ridiculously good. The guacamole was sweet and perfectly seasoned. Sylvia's Favorite smoothie was delectable, and the desert - snicker doodle ice cream over a brownie - was one of the best non-dairy, no refined sugar desserts I've ever tasted. All around solid, and I'll be back whenever I'm in town. ”—Derek B. Brooklyn, NY

Excellent raw food cafe...proof that food doesn't have to be cooked to be delicious! I don't agree at all with a previous posting about the prices. I've eaten at several other raw food cafes and the portions are usually quite small...not so here. The Asian Noodle Salad is da bomb - the flavors explode in your mouth, and the smaller size for $7.25 was very generous and filling. The Curried Carrot Soup is divine, and the Mock Tuna Salad, which my friend ordered, came with a killer spirulina dressing that I swear gave me a rush! ” —Marsha M. Austin, TX
